Gustave Moïse was born into a family of glass painters. He studied at the Ecole des Beaux-Arts in Rouen. He mostly painted in Dieppe. Horse racing was one of his favourite subjects, in particular the full gallop of thoroughbreds.

In Paris, he exhibited at the Salon des Artistes Français and the Salon d’Automne.
